The cocktails of The Cosmopolitan in Las Vegas are delicious works of art

Break out your cameras and tastebuds for a drinking adventure at The Cosmopolitan! Property mixologist Andrew Pollard—a star in the Vegas beverage industry—has created a slew of new cocktails at various venues in the property. Not only do these cocktails, many based off classic cocktails, taste delicious, they are exciting to look at.

“In developing all these drinks, I’m always thinking about what environment they’re served in,” Pollard says. “There’s that experiential component, and what evokes experience? That sense of escapism. You have a chance to have destination cocktails. They transport you, take you to a different place.”

We’ve highlighted some of the cocktails at four different venues: The Chandelier, Ghost Donkey, Wicked Spoon and Vesper. Like the piña colada and the dark ’n’ stormy? Hit up The Chandelier. How about Manhattans? Visit Ghost Donkey. What about the gin and tonic or the mint julep? Head to Vesper. You down for a michelada? Try Wicked Spoon.

All these classic recipes have taken their place in the cocktail zeitgeist, but now The Cosmopolitan takes drinkers on a whole new taste experience with their twist on them.

“Come here and dare to be different,” Pollard says. “Take a chance. Try something different. Indulge in the experience. You can get anything you want anywhere else, but come here for the experience.”

The Chandelier:

South For the Winter

Bacardi 8-Year sherry cask rum, Smith & Cross Jamaican rum and house-made nitro piña colada mix


Porter’s Tropical Old Tom gin, coconut-lychee cordial, fresh lime, Peychaud’s Bitters and hibiscus ginger beer

At Vesper:


Nordés gin, Lustau Manzanilla sherry, Monin red passion fruit syrup, fresh lime, Q Classic tonic


Skrewball peanut butter whiskey, Shackleton blended malt Scotch, Giffard Crème de Peche and Lemonhart 151 rum, fresh mint and Bitter Queens tobacco bitters

At Ghost Donkey:

Smoked Corn & Coconut Manhattan

Sierra Norte purple corn Oaxacan whiskey, Verás mezcal, Clément Mahina coconut liqueur, Punt E Mes vermouth and mole bitters

Lucha Libre

Fidencio Clásico mezcal, Zaya Gran Reserva 16-year rum, Fernet-Branca, Mexican Coke and lime

At Wicked Spoon:

Cha Cha Chelada

Modelo Chelada Limon Y Sal, 21 Seeds cucumber jalapeño tequila, Chinola passion fruit liqueur, Reàl mango puree, Tajin seasoning

Morning Buzz
